APPELLATION: Paso Robles

GRAPE VARIETIES: Made predominantly from Grenache and
Syrah, and like a true Rhône wine, blended
with up to six other grape varietals.

ALCOHOL: 15.4%

VINIFICATION: The grapes were cold soaked 3 to 7 days,with extended skin contact up to 5 weeks,and then gently pressed. The different varietals were co-fermented to increase flavor and complexity. The wine was aged in a combination of 25% new American oak barrels, 160-gallon Demi-Muid barrels
and 3000-gallon French oak tanks to greater develop the wine.

ALCOHOL: 14.9%

VINIFICATION: Hand picked into half ton bins. Cold soaked at 40 degrees for one to seven days. Extended skin contact for three to five weeks. Pumped over five to six times per day. Pressed and pumped to barrels. Aged 12-30 months in a combination of French and American oak.

VINIFICATION: Aged in 100% New French Oak Damy Barrels, 100% malolactic fermentation and 100% sur lies. The barrels are stirred (Battonage) weekly to give the wine a creamy richness.

VINIFICATION: The grapes were immediately crushed to a stainless steel tank and chilled to 40
degrees to retain all the fruit character. The grapes were kept at 40 degrees for 15 days of cold soaking
to extract all the Cabernet Sauvignon characteristics so many Cabernet connoisseurs' desire.

VINIFICATION: There were two separate lots used to create this wine. The first lot was co-fermented
Petite Sirah, Syrah and Cabernet Sauvignon, and the second lot was co-fermented Cabernet Sauvignon, Cabernet Franc and Petit Verdot. The two lots were aged totally separate and then blended just before bottling.
