Aged 11 months in 100% new Demi-Muid barrels. This wine is Joanne Russell’s favorite white wine and bears her signature.

VINIFICATION: The grapes were immediately crushed to a stainless steel tank and chilled to 40
degrees to retain all the fruit character. The grapes were kept at 40 degrees for 15 days of cold soaking
to extract all the Cabernet Sauvignon characteristics so many Cabernet connoisseurs' desire.

VINIFICATION Hand-picked into half-ton bins. Cold soaked at 40 degrees for seven
to thirteen days. Extended skin contact for three to five weeks.
Pumped over five to six times per day. Pressed and pumped to 75% new oak barrels. Aged 12-30 months in a combination of French and American oak. Moved to begin aging for 6 months in a new Frenchoak ‘Emitage 600 gallon Foudre.






Taste: Chenin Blanc is a prime example of this palate-pleasing balance of rich fruit notes and savory smoke.

GRAPE VARIETIES: Cabernet Sauvignon from the 2017 vintage, and Syrah from the 2018 vintage
ALCOHOL: 15.6%
VINIFICATION: There were two separate lots used to create this wine. The first lot was co-fermented
Petite Sirah, Syrah and Cabernet Sauvignon, and the second lot was co-fermented Cabernet Sauvignon, Cabernet Franc and Petit Verdot. The two lots were aged totally separate and then blended just before bottling.

VINIFICATION: Produced from west side estate fruit. Hand picked into half ton bins. Cold soaked at 40 degrees for 7 days. The two varietals were co-fermented together. Extended skin contact for 3-5 weeks. Pumped over 5-6 times per day. Pressed and pumped to barrels. Aged 21 months in a combination of French and American oak.

VINIFICATION: Produced from grapes grown in the coolest areas of Paso Robles. Hand-picked into half ton bins. Cold soaked at 40 degrees for seven days. Extended skin contact for three to five weeks.
Pumped over five to six times per day. Pressed and
pumped to a French Oak Foudre until April 2020.
